Healthy Leafy Munchkins - My special recipe, packed with Protein and Iron!!

OK, let's just all agree that we love fried food. How about, say, a bread roll on a #weekend #morning with tea, ketchup and coriander chutney? Mouth started watering just by reading about it? A foodie like me will definitely start drooling. But, bread roll being deep fried, and filled with potatoes make it tasty yet quite unhealthy. Too many calories, right? To be honest, I looooove regular bread roll. But, what if I told you this super healthy recipe of mine tastes a tad bit like it with flavors that are guaranteed to explode your taste buds? Would you give it a try? You'd definitely yearn for more.
The little creative corner of my mind was continuously thinking of a unique recipe for last few days and at the same time, my heart was craving for bread rolls too. Upon asking my dear husband - let's make bread rolls this weekend, the answer I got was - 'No Way' its too oily. His rule is to eat oily just once a week and unfortunately, that week's oily stuff was already gobbled down. But, I wanted to eat bread rolls. Thinking and thinking what to do, this brilliant idea popped up - why not try healthier delectable munchkins that could satiate my craving too. I wanted to make stuffing full of greens and include some protein as well. So, I thought I will go with Spinach (Paalak). Paneer is my choice for protein here and for extra source of fiber and flavor I chose spring onions, or scallions, if you will. How does that sound to you? My husband gave me a thumbs up for this right away :). Of course, I wanted to avoid deep frying, so appam pan came really handy!! Prepared and eaten in less than half an hour :D. Trust me, you can't just imagine how appetizing they were. You'll only know when you try for yourself. Super yum, Super healthy!! So, here I bring you this lovely creation.
This recipe will serve 3-4 people . Do try it. I'm certain that you'll love it!
List of Ingredients:
For Bread Rolls
Bread (Any - White/Brown) - 18-20 pieces (I used both types of bread).
Oil - 1.5 tbsp + some oil for brushing appam pan.
Spinach (Washed and Chopped) - 1.5 cups.
Spring Onion (Washed and Chopped) - 1 cup. (Use only green part).
Paneer (Crumbled) - 200 gms.
Salt - per taste.
Jeera/Cumin seeds - 2 tsp.
Garam Masala - 1 tsp.
Dhaniya/Coriander Powder - 3 tsp.
Laal Mirch/Red Chili Powder - 1 tsp.
Chopped Green Chilies - 2-3
Easy to follow steps:
First, we'll make stuffing. In a pan, take oil on low-moderate flame. Add jeera, green chilies and let them crackle a bit. Now, add spinach, saute it on low flame for a minute, then add spring onion. Let it cook on moderate flame while stirring continuously for couple of minutes. Lower the flame, then add dry spices (dhaniya powder, red chili powder) and mix well. Now add paneer and give it a mix again. Finally, put salt and garam masaala, and saute it until it feels slightly dry.
Now just roll the munchkins. Remove the edges of bread and sprinkle some water all over the bread to make it slightly moist. Add 1 tbsp of filling and bring the corners together making a small ball by pressing it gently between your palms. Make all the munchkin balls in the same manner. Place appam pan on moderate flame, brush some oil in all the moulds and place the rolls. Apply some oil on the top as well and keep flipping the munchkins every 1-2 minutes to cook them till they get golden brown crust all over. Keep the flame moderate all the time. It should take around 8-10 minutes for one batch. Take them out and serve with ketchup, coriander chutney and chai!!!
And, look at these beautiful, flavorful, chewy, soft and crisp, munchkins ready on the plate to be devoured!!!
