Valentine's Special - Beetroot Halwa & Custard Parfait


For My Valentine!

February 14th is here and I am sure you're ready to celebrate this #Valentine's with your loved one. Indeed it's a great day to celebrate #Love and togetherness, so, a very Happy #Valentine's #Day to all of you!

#Valentine's is all about sweets, flowers, teddy bears, roses, chocolates. When I think of Love, my attention is always drawn towards Red color and this valentine's I wanted to come up with a dessert, A Red Colored Dessert which looks pretty and tastes amazing. The good thing is you don't need any special ingredient to make this, so, here I bring you a special dessert recipe for your Valentine. This dessert is crunchy and creamy at the same time and I'm sure your valentine and you will enjoy it alike.


List of Ingredients:

  1. Full Cream Milk - 3 cups.

  2. Beetroot - 2 (Medium Sized).

  3. Sugar - Half cup (can be adjusted depending on personal preference).

  4. Custard Powder - 2.5 tbsp

  5. Fruits as per your preference for custard.

  6. Cardamom - 2 (Crushed or 1 tsp powder)

  7. Cookies that you like (Oreo, Chocolate Chip)

Easy to follow steps:


Peel beetroot, wash it and chop in small cubes. Transfer it to a pressure cooker and add 3 tbsp of milk. Keep the flame high until you hear 6-7 whistles, then let it simmer on low flame for 10 more minutes.


While your beetroot is cooking, let's get the custard ready.

Take 1.5 cups of milk in a pan and bring it to a boil. In a separate glass/bowl mix custard powder in half cup of milk. I used vanilla flavored custard powder. Make sure there are no lumps in the mixture. When milk comes to a boil lower the flame and add custard mixture slowly while stirring continuously. Boil custard to get desired consistency and keep stirring. Switch off the flame, add 5 tbsp of sugar and mix well. I made it thick for the parfait. Keep it in refrigerator to cool down.


While custard is getting chilled, check on beetroot after pressure is released naturally. Mash beetroot pieces with a masher and add 1 cup of milk. Let it simmer for another 15 minutes, mash beetroot chunks if there are any.

If you feel there are still chunks of beetroot, pressure cook for 3 more whistles and let the pressure release. Open the lid and boil it until all the milk is absorbed. Let halwa cool a bit then add cardamom powder and 3 tbsp of sugar, and mix well.


And our beautiful beetroot halwa is ready!

So, our custard is ready, halwa is ready, let's assemble the Parfait. Chop fruits to bite size pieces and mix well in custard (I've used grapes and bananas). In a dessert glass, layer halwa first, then layer custard. Layer crushed cookies of your preference (I've used chocolate chip) and decorate as you like. I used Pirouline wafers.


Quick Tip : To make custard smooth, you can sieve it.

This evening my husband came to this beautiful looking dessert! By the way he is the one who does all the food photography for me. :)
